- ½ cup butter
- 1 cup brown sugar
- 1 egg
- 1 cup buttermilk
- 1 tsp. baking soda
- 2 cups flour
- 1½ cup rhubarb
- 2 tsp. vanilla
Cream butter and sugar, add egg, buttermilk, baking soda and flour. Fold in the rhubarb and vanilla, and then pour into a well-greased 9”x 13” pan. Sprinkle with the topping and bake at 350 degrees Fahrenheit for 30-35 minutes.
Topping:
- ½ cup brown sugar
- 2 tsp. cinnamon
Mix sugar and cinnamon together.
